To say I could eat this whole thing by myself is an understatement. Sweet potatoes and bacon were made for each other. This is a sweet potato roast that is smothered and covered in bacon and bacon fat.
The best thing about this dish, besides the taste, is that it is super easy to make.
You might read the recipe and wonder if you will need seasonings or salt. The answer would be no. The saltiness of the bacon is savory enough for the sweetness of the potatoes that, in my opinion, no extra salt or seasonings are needed.
What you’ll need:
2 to 3 medium to large sweet potatoes
5 to 6 slices of bacon uncooked
A pan
Real butter or coconut oil 2 to 3 heaping tablespoons
Directions:
Slice the sweet potatoes and arrange them in a pan in a circular motion standing on their side.
Tuck the raw bacon around the potatoes (the more bacon you use the better off you’ll be)
Place the pats of butter or chunks of coconut oil throughout the pan
Bake at 350 degrees for about 45 minutes (this may vary per oven and amount of sweet potatoes)
What you’re looking for:
Crispy, not dried out potatoes (they can be crispy around the edges and soft in the middle). You’re also looking for crispy bacon. Check periodically to make sure you have enough fat (renderings etc.) to keep the potatoes from burning or drying.
