The Paleo lifestyle forces you to get creative in the kitchen. If creativity in the kitchen is not your strong suit, you’re not alone. Of course there are great Paleo cooking blogs, Pinterest and Google. However the best source of information can be your Paleo friends. Often times they have quick and easy recipes that feature only a few ingredients. If you’re anything like me, the fewer the ingredients the better.
While recipes on Paleo blogs and Pinterest look appetizing they more than likely have multiple ingredients and steps. That’s not how I roll. I need efficiency.
One recipe I created on my own ended up being quick and easy but most importantly delicious.
ACORN SQUASH SOUP:
Cooked 1 whole carrot, 1 yellow delicious apple, 1 acorn squash in bacon rendering & coconut oil until fork tender.
Add 1 cup of chicken broth (I used organic chicken broth from Aldi $1.29)
Add 1/2 cup of almond milk (I used Great Value almond milk $2.58 1/2 gallon)
Add pinch of cinnamon and bring to a boil. (Cinnamon 79 cents at Aldi)
Then pour into a blender or food processor to liquify.
Servings:
I got 4 bowls out of this mixture.
Topping:
Sprinkle sunflower seeds on top to substitute for crackers. (Unsalted, roasted sunflower seeds Walmart $2.98)
