I’ve made several cauliflower inspired dishes recently.  Since I’m the only one at the house that eats the stuff I make my $1.99 Aldi purchase last for several meals.

Recently a friend at my CrossFit box inspired me to try ‘fried cauliflower rice’ – you know fried rice from Chinese restaurants?  Well it was delicious, even though there are some key ingredients missing.

Here’s what you’ll need:

Cauliflower (depending on how many you’ll serve, I used a quarter of a head)

2 to 3 eggs

Shrimp, thawed

Spices (She suggested ginger, but I didn’t have any)

Coconut oil (1 to 2 tablespoons)

Directions:

Grate the cauliflower or finely chop it with a food processor

In a skillet fry the eggs (I forgot to do the eggs first) with coconut oil

Saute the cauliflower and add the fried eggs

I had to fry the eggs with the cauliflower in the skillet.

Add your shrimp and garnish

 

Another spin on this dish – no eggs:

Cauliflower ‘rice’ sautéed in coconut oil with lime juice and cilantro. Sautéed shrimp in coconut oil & added slices of avocado.
